These simple warm chicken balls pair wonderfully with our homemade gin mayonnaise. And this delicious dish is perfect as an appetizer, snack, or for our gin afternoon tea.
Preheat the oven to 180°c. Line a baking tray with baking paper.
Place the ingredients in a bowl. With clean hands, mash and squeeze the ingredients together until they are well combined and the ingredients stick together. If the mixture is too sticky or runny to form balls, add some more breadcrumbs.
Divide the mixture and roll into balls approx. 2.5 to 3 cm in diameter (about the size of a walnut).
Place the balls on the baking tray about 2 cm apart. Place the tray in the oven and bake for about 15-17 minutes.
For the mayonnaise
Pour ¾ cup of your oil into a narrow, tall jar or bowl and add the remaining ingredients. Put your immersion blender into the jar or bowl and let the blender rest on the bottom.
Pulse until the homemade gin mayonnaise starts to emulsify and turn a pale yellow or cream. Move the blender up and down to incorporate any oil sitting on the top until it is all well combined.
Taste test, adding more salt, pepper, lemon, gin or the remaining oil, as needed. Your mayonnaise will be ready in just a couple of minutes.
